Dough divider & rounder

Brook food Oddy Novatek 2 Pocket Roll Plant with Pi

The Oddy Novatek 2 Pocket Roll Plant with Pinner is used to automatically divide, round, shape, and mould raw bread dough into uniform rolls and buns at high speeds. It replaces the labor-intensive process of scaling and shaping dough by hand, making it a staple machine for small-to-medium commercial bakeries, wholesale bakers, and supermarket in-store bakeries.

1. Primary Functions: Dividing: It automatically cuts a bulk mass of dough into precise, equal weights without tearing the dough structure.
Rounding: It rolls the divided dough portions into tight, consistent round dough balls (baps, dinner rolls). Pinning & Moulding: The integrated "pinner" section flattens and rolls the round dough pieces into elongated shapes (finger rolls, hot dog buns).

2. Specific Bakery Products It Creates: By changing the internal moulding drums or adjusting the pinner belts, bakeries use this machine to produce: Round items: Hamburger buns, traditional baps, dinner rolls, and slider buns. Elongated items: Hot dog rolls, finger rolls, bridge rolls, submarine rolls, and miniature baguettes/batards up to 230mm long.

3. Why Bakeries Use It (Key Benefits): Massive Labour Savings: It can produce up to 6,000 rolls per hour (100 rolls every minute), a volume that would require a large team of bakers to do manually.
Cost Efficiency (Oil-Free System): Unlike traditional dividers that require expensive food-grade divider oil to keep dough from sticking, the Novatek uses a completely dry, oil-free process. This saves thousands of pounds annually in oil costs and makes cleanup much easier. Product Consistency: Every roll comes out exactly the same weight (from 10g up to 208g in 2-row mode) and the same shape, which ensures uniform baking times and presentation.

Physical Dimensions & Spatial Footprint: Standard Operating Footprint: Typically occupies a width of 0.8 m to 1.2 m and a base chassis length of 1.5 m to 2.5 m.

Extended Length with Integral Pinner: When configured with the long-bed outfeed pinner/moulder belt assembly, the total inline workspace length requires approximately 3.2 m to 3.8 m to clear the outfeed table.
Operating Height: Roughly 1.6 m to 1.8 m to the top rim of the bulk dough feed hopper to facilitate ergonomic manual or conveyor loading.

Total Net Weight: Approximately 950 kg to 1,200 kg depending on the configuration of heavy-duty plunger blocks, internal moulding drums, and chassis reinforcement. Operational & Production Capabilities.

Throughput Capacity: Processes up to 50 dough pieces per minute per row. For a standard 2-pocket (2-lane) configuration, this delivers a maximum output of 6,000 pieces per hour.

Hopper Capacity: Features a standard integrated bulk dough conveyor hopper that accommodates 55 kg of raw dough.

Scaling Ranges: 2-Row Operation: Scales between 10 g and 208 g simultaneously across both lanes.
1-Row Operation: Reaches 208 g to 500 g utilising lane blanking and larger interchangeable plunger blocks.

Pinner Capabilities: Accurately stretches and shapes rounded dough pieces into finger rolls, hot dog buns, or miniature batards up to a maximum length of 230 mm.
Utility & Facility Requirements: Electrical Supply: Requires a standard industrial 3-phase 400V, 50Hz electrical hookup.
